Thyme's New Chef. Vermont Wine Week. March 27-31

Thyme (formerly the Tip Top Cafe) has a new name, a new look, and now a new chef.  Francisco Guerra has worked in a variety of local restaurants following his relocating to the Upper Valley from Honduras, including an 18-year long stint at Simon Pearce in Quechee, VT.  He had been the sous chef at Thyme since 2016 and assumed the head chef position in February 2018. His coworkers in the kitchen have praised "his creativity, professionalism, and passion for food."

Chef Guerra and the team at Thyme, in conjunction with the Vermont Fresh Network, will be participating in Vermont Wine Week, serving special dinners each evening from Tuesday, March 27 through Saturday, March 31, each paired with wine from the Lincoln Peak Vineyard of New Haven, VT. This is not a typical, one-night only wine dinner. The specials will be available each evening all week long; the wine will be available by the glass and by the bottle, and patrons can even raise a glass at lunch. Thyme’s regular menu and wine list will be available as well.

-----Sunflower Crusted Cod, wilted kale, diced potatoes, roasted corn sauce, paired with Lincoln Peak La Crescent White

-----Braised Boyden Farms Brisket, mascarpone polenta, baby carrots, roasted cipollini onions, paired with Lincoln Peak Marquette

Vermont Wine Week is a project designed to introduce more Vermont-made wines to restaurants and their customers. Originally a farm that raised strawberries, the 12-acre Lincoln Peak Vineyard and Winery  is now Vermont's largest grape producer, and its wines are 100% estate-bottled, which means it uses only its own grapes. At the International Cold Climate (Vermont certainly qualifies!) Wine Competition, the two wines chosen for the Thyme dinner were both award winners. Marquette won Best in Show Red Wine, and La Crescent won a Double Gold Medal. Lincoln Peak is located just north of Middlebury, VT.  It offers seasonal tastings, picnics and walks; tours by appointment.

Reservations are recommended for dinner at Thyme, and can be made by calling 802.295.3312. The restaurant is located in the Tip Top Building at 85 North Main Street, White River Junction, VT.
