Vermont Brand to Occupy Space Adjacent to Jake's Quechee Market
The Skinny Pancake will be opening a new location adjacent to Jake’s Quechee Market along Route 4 in Hartford, VT in the 2,000 square foot space previously operated as Jake’s Quechee Market Cafe. Opening day is set for early February.
The menu for this location will feature sweet and savory crepes, coffee and espresso, breakfast sandwiches, salads, burgers as well as a full bar with a local draft beer list.
Founder Benjy Adler explains: “We’re really excited about this opportunity in Quechee because it allows us to return to our roots as a cafe. A lot of locals have emphasized a need for a super comfortable space where people can quietly work on laptops, have meetings, and catch up with family and friends over a casual breakfast or awesome cup of coffee, so that’s exactly what we will be providing. There will be a special emphasis on creating a coffee shop vibe for folks in an intentionally casual atmosphere.”
The Skinny Pancake’s mission statement includes a commitment to local food sourcing. A recent audit of their food sourcing calculated that about 70% of their locations’ raw and value-added ingredients came from Vermont, New Hampshire, and the surrounding regions.
“We are on a mission to buy local and growth helps execute that mission. The Quechee Skinny Pancake is the size, shape and the type of restaurant we hope to bring to other regions in the future,” Adler adds.
“We’ve consistently found that operating multiple locations in proximity to each other increases the amount of food we can purchase locally. We’ll now be able to buy more from our existing farmers in the Upper Valley while we also expand our local food footprint in the area to some additional farms,” explains Executive Chef Keith Lada. As part of this expansion to Quechee, both Upper Valley Skinny Pancake locations will begin to source all their grass-fed burger meat from Shire Beef in Vershire, VT.
Jake’s Quechee Market is a family-owned, independent market that first opened its doors in 2013 and has since become an important part of the community. Owner James Kerrigan is excited about welcoming The Skinny Pancake into the space. “We’re really excited for this new partnership with Skinny Pancake. We’ve long been impressed with The Skinny Pancake operation. They have developed a strong brand and are focused on a great mission, both of which will be a great fit for the community.We look forward to becoming neighbors,” Kerrigan says.
