An English Christmas Cake is elaborate and takes almost a year to prepare.
The fruits (currants, raisins,figs,dates,prunes,citron,angelica,candied lemons) are soaked in Port wine and rum for months. During construction pulverized almonds are added to the batter.
After the cake is baked it is covered with a layer of marzipan then iced.
It can be stored in a tin and enjoyed for a year.
