Have you been to Lou's lately? I have; honestly, I go often. I love the specials. They are a great combination of flavors whipped together in a creative and often seasonal recipe.
Lou's did not disappoint this morning. I actually ordered off their lunch special- the Chimichurri Buddha Bowl. Why? It still felt breakfasty, if that's a word.
Check out my delicious feast: a heaping helping of quinoa and riced cauliflower topped with roasted sweet potatoes; black beans; fried and crispy kale; poached eggs; avocado; crunchy, toasted pepitas; sprinkled with a bright, homemade chimimichurri sauce. I added some cheddar cheese to mine.
