Mid-November calls for comfort. Looking ahead to long winter months can make even the most avid lover of all things icy crave thick blankets, warm beverages, and food best eaten by a roaring fire. Enter these homemade Churro Spiced Cake Doughnuts.

Fluffy cake, redolent with warm spices, gets rolled in a mixture of sugar and sweet cinnamon for a heavenly blend of texture and taste.

They’re simple to make, taste just as sinfully delicious as their typically-fried counterparts, and, if you and your people can manage not to eat them all in one sitting, are easily frozen. Pair one of these sweet loves with a piping cup of joe or your favorite chai, and you’ll never go back to store-bought doughnuts again.

Churro Spiced Cake Doughnuts

Ingredients:

2 cups all-purpose flour

3/4 cup white sugar

2 tsp baking powder

1/4 tsp ground nutmeg

1/4 tsp ground cinnamon

1 tsp salt

3/4 cup milk

2 eggs, beaten

2 tsp vanilla extract

1 tbsp melted butter

For the topping: in a medium sized bowl, mix together 1/2 cup of white sugar, 1/2 cup of light brown sugar, and 2 tbsp ground cinnamon.

Directions:

Preheat oven to 325 degrees.

Lightly grease the doughnut pan. In a large bowl, mix flour, sugar, baking powder, nutmeg, cinnamon, and salt. Stir in milk, eggs, vanilla, and melted butter. Beat together until well-blended. Fill each doughnut cup approximately 3/4 full. Bake 8-10 minutes or until doughnuts spring back when gently pressed. Allow to cool slightly before removing from pan. While still warm, roll each doughnut in the cinnamon sugar mixture, using a spoon to coat each doughnut fully.
