During the cold, dark days of winter I found myself wanting hot cereals for breakfast everyday. Yet most often times, I don’t have the time to prepare a pot full of porridge to cozy up with. Therefore, as the seasons change and the days begin to warm up a bit, I sought out a new, refreshing recipe to revamp my morning routine from grabbing a granola bar and running out the door. I recalled seeing overnight oats ubiquitously on serval social media platforms for quite some time now and decided to give them a try when I was too sick to sufficiently take care of my household’s meals for about a week. These Vanilla Soaked Overnight Oats with Maine Blueberries + Chia Seeds are so simple, no cooking required and take all of five minutes to prepare.

These Vanilla Soaked Overnight Oats with Maine Blueberries + Chia Seeds are best when eaten cold. They are creamy, healthy, and a tad bit sweet | and can be both gluten free with gluten free oats and nut free - yet for us, always nut free |. I use whole milk plain Greek yogurt, yet vanilla Greek yogurt can be used in place of the plain yogurt; just omit the vanilla bean or extract and the maple syrup or honey. Non-fat or low-fat Greek yogurt can be used in place of the whole milk yogurt, the oats just won’t be as thick and creamy. The chia seeds are an optional addition. The chia seeds provide omega-3 fatty acids and are rich in antioxidants, while also providing calcium, fiber, and iron. Both the pepita seeds and coconut are optional additions as well, they provide a nice added texture; yet if you have an aversion to the texture of either go ahead and omit.
