The Secret Behind This Mac and Cheese? It's Smoked!

PHOTOS: 5th Annual Mac and Cheese Challenge

Twenty local restaurants competed to claim the top mac and cheese prize for the annual Mac and Cheese Challenge earlier this month and Mo’s Backyard BBQ proved themselves as mac and cheese experts.

Mo’s claimed many of the top prizes for their Smoke Gouda Mac & Cheese--a secret recipe that turned out to be a hit. Mo’s won the “Judge’s Award,” “Best Vegetarian” and it tied for “Kid’s Favorite” with the Kedron Valley Inn of South Woodstock.

That must be some good mac and cheese!

This was Mo’s first time entering the competition. Owner Shawn Moshinsk, who goes by the name Mo, said he operates out of a food truck in Marshfield.

Shawn wouldn’t say too much about his recipe, but here are some of his secrets:

1. It takes him a little over an hour to make one pan before he smokes it. His mac and cheese is smoked for 2-3 hours.

2. The recipe combines four types of cheeses, including Vermont Farmstead Cheddar.

3. Shawn makes his own secret cheese sauce.

This was the 5th Annual Mac & Cheese Challenge, hosted by Vermont Farmstead Cheese Company and Castleton Crackers.

About 2,800 people came to the event and they helped determine the best mac and cheese from more 20 different recipes.

All attendees picked the “People's Choice award” and all children under 12 got their own ballot to pick “Kid's Choice.”

This year’s official judging panel included Hannaford Executive Nate Sprague; Whole Foods Market Team Member Emiljia Mitrovski; Ski Vermont Marketing Director Sarah Wojcik; and Vermont Department of Tourism’s Hilary DelRoss. They sampled all recipes to pick the “Judge’s Choice Award,” “Best Vegetarian” and “Best Gluten-free.”

There were a number of other activities, too, like the Harpoon beer on tap, live music from the band Sensible Shoes, a calf and cow petting area, free cookies from King Arthur Flour’s cookie truck, and lawn games.
